DIRECTIONS
Bring a large pot of water to a boil. Add the pasta and cook until al dente, following the manufacturer's suggested cooking time.
Meanwhile, melt the butter in a large skillet. Add the garlic and sauté about 1 minute. Set aside.
In a bowl, beat the egg yolks, cream, and 1-1/2 cups of the Parmesan.
As soon as the pasta is done, drain it and add to the skillet. Pour in the cream mixture and toss over low heat for about 1 minute. Add the mozzarella and continue tossing until the sauce thickens and coats the pasta, 1 to 2 minutes more. Sprinkle generously with the remaining Parmesan and the pepper and parsley. Serve immediately.
