Mom-Style Chicken Salad

DIRECTIONS

  • Remove the skin from the poached chicken breasts, and remove the meat from the bones. Cut the chicken into strips (a serrated knife works well for this).
  • In a food processor or blender, mince the parsley, scallions and garlic with the vinegar and Worcestershire sauce. Add the mayonnaise and process until smooth. Turn the dressing into a small bowl and fold in the sour cream.
  • Two hours before serving, combine the chicken and dressing and refrigerate. Stir in the broccoli just before you serve the salad. Season to taste with salt and pepper.
