Texas Deep-Fried Turkey

DIRECTIONS
Clean and dry turkey thoroughly. Remove neck and giblet bag from the small cavity in the front, as well as the large body cavity. Use these items for making stock.
Generously season inside cavity with salt , pepper and cayenne.
Heat oil in cooking pot large enough to submerse turkey in hot oil. For safety's sake, equipment for deep-frying outdoors is recommended.
Heat oil to 350°-375°. When oil is hot, using a sling of strong twine or string or a lifter that comes with a turkey-frying kit, lower turkey into hot oil. Cook about 5 minutes per lb or until meat thermometer inserted in thickest part of thigh reaches 180°
