Almond Blossoms

  • Use a 2-1/2-inch scalloped-edge or plain round biscuit cutter to cut rounds of puff pastry to fit mini muffin cups. Gently ease each round in place. Use the tines of a fork to prick the bottom of each pastry round. Refrigerate the pastry while preparing the filling.
  • Preheat the oven to 375° F.
  • Toast the almonds in the preheated oven for 7 to 10 minutes, stirring occasionally. Allow the nuts to cool. Then process them in a food processor, using a pulsing action, until they are finely chopped. Add the remaining ingredients in the order given and process until well blended. Spoon the filling into the pastry-lined muffin cups.
  • Bake the pastries in the preheated oven for about 20 minutes, until the pastries are golden brown.
  • Cool the Almond Blossoms for a few minutes in their pan before removing them. Serve at room temperature.
