The Best Egg Salad (in memory of Patty Marx)

DIRECTIONS
In a small bowl, whisk together the mayonnaise, sour cream, mustard and paprika. In a medium bowl, combine the eggs, bacon and scallions, and stir in as much of the mayonnaise dressing as you like. (I use it all.) Add horseradish and salt and pepper to taste.
Makes enough filling for 8 sandwiches. I know there are some people who eat egg salad with a fork, but I'm not one of them. I hope Patty isn't either.
