  • Cut open the section of vanilla bean and scrape as many of its seeds as you can into the milk in a saucepan. Then add the scraped section to the milk as well. Bring the milk to a simmer, stirring, and simmer it for 5 minutes. Fish out the vanilla pod and discard it.
  • In a food processor, combine the hot milk, carrots, butter, mustard and nutmeg. Process the ingredients until they're as smooth as you like; I like to leave a few chunks for character. Season the mixture to taste. If you refrigerate it, reheat it gently in a double boiler. If you decide to serve it right away, you can heat it in a regular saucepan over very low heat.
