DIRECTIONS

  • The day before you need the sandwiches, peel and thinly slice the cucumbers. Place them in a bowl with the salt, and stir so the salt will touch all the slices. Cover and refrigerate for 12 to 24 hours.
  • Drain the slices and pat them dry with a paper towel. Mix the vinegar, water, and sugar. Place in a bowl with the cucumber slices and let stand an hour or more. Remove the crusts from the bread. (If you feel this is wasteful, just feed them to your pets or the birds!) Arrange the bread slices on a large flat space so you have room to work. Mix the mayonnaise with lemon juice. Butter the bread slices and spread them with the mayonnaise mixture.
  • Drain the cucumber slices, and once more blot them dry with a towel. Place 4 pieces of cucumber on every other bread slice in the form of a cross. Cover each with another slice of bread. Cut in triangles by slicing corner to corner, crisscross. This will make 80 lovely little sandwiches. They may be wrapped in plastic, covered with a damp towel, and kept for several days in the refrigerator.
