Cook the sugar and water together until the mixture reaches 238°F on a jelly thermometer (soft-ball stage,). Wash and hull the berries, add to the syrup, cover, and remove from heat. Let stand for 10 minutes. Skim off any foam. Remove the berries and set aside. Cook the syrup to 238°F again, add the berries, and let stand over very low heat for 15 minutes. Skim, remove the berries, and reheat to 238°F. Add the berries once more and cook slowly until the syrup is thick. Let stand for 24 hours before putting into sterilized jars and closing them. Refrigerate, freeze, or process in a simmering-water bath at 185°F for 10 - 15 minutes.
