Beach Cities Irish Soda Bread

DIRECTIONS
In a large bowl, mix together the flour, salt, baking powder, baking soda, sugar, and raisins, if used. Add the butter and cut with a pastry blender until crumbly. Slightly beat the egg, mix with the buttermilk, and add to the dry ingredients. Stir until blended. Turn out on a floured board. Knead until smooth, about 3 minutes. Divide dough in half.
Shape each into a round loaf. Place each loaf in an 8-inch cake or pie pan. Press down and with a sharp knife cut crosses on top of the loaves (about 1/4 inch deep). Bake at 375° for 35 - 40 minutes.
