Cream the shortening, citrus rind, and sugar together. Add the eggs, one at a time, beating well after each egg.
Sift the dry ingredients and add alternately with the bananas and rum (if used) to make a smooth mixture.
Place the bread batter in a greased 9" X 5" X 3" loaf pan. Bake at 350° for one hour, until golden brown. Place on a rack to cool before removing from pan.
