  • Put the cucumbers, tomatoes, onions, peppers, and cauliflower in a large bowl. Mix the salt with the cold water, pour over the vegetables, cover, and let stand for 8 hours or overnight.
  • Drain and rinse under cold water. Put the vegetables in a pot, cover them with fresh cold water, bring to the boiling point, and drain in a colander once again.
  • Put the flour, mustard, and turmeric in the pot. Stir in enough vinegar to make a smooth paste, then gradually add the remaining vinegar and the sugar, stirring well. Bring to a boil, stirring constantly, and cook until thick and smooth.
  • Add the vegetables and cook, stirring, until heated through.
  • Spoon into hot, sterilized jars, leaving 1/4-inch headspace, and seal. Or close the jars and process in a boiling-water bath for 10 minutes.
