DIRECTIONS

  • Combine the sugar, eggs, vinegar, flour, and water in a double boiler and cook on low heat until thick and smooth, stirring occasionally. Just before removing the mixture from the heat, stir in the butter and lemon extract. Pour the filling into the pie shell.
  • Cool the pie in the refrigerator for at least 3 hours. Before serving, mix the whipping cream with an electric mixer on medium speed for 2 minutes or until it turns thick and spreadable. Spread the whipped cream evenly on top of the pie and sprinkle with cinnamon. Keep in the refrigerator until ready to serve.
