Apple Chutney

DIRECTIONS
Put the tomatoes in a bowl, toss them with 2 tablespoons of the salt, cover, and let stand for about 12 hours. Drain and soak them in cold water for a few minutes, then drain again. Heat the vinegar, the remaining 2 tablespoons of salt, and the sugars in a large pot. Add the drained tomatoes, the apples, onions, raisins, and ginger, and cook over low heat for about 30 minutes, until the apples and onions are tender. Spoon into hot, sterilized jars, leaving 1/4-inch headspace, and seal. If you wish, process in a boiling-water bath for 10 minutes.
GINGER APPLE CHUTNEY
Omit the ground ginger and substitute 6 oz preserved ginger, cut small.
