DIRECTIONS

  • Combine the fruit, raisins, ginger root, sugar, and vinegar in a large Dutch oven or kettle.
  • Tie the allspice, cloves, and cinnamon sticks in a piece of cheesecloth, smash the spices with a hammer or mallet to break up, and add to the fruit mixture.
  • Bring to a boil, stirring occasionally. Reduce heat to simmer and let mixture cook for about 2 hours, or until thickened and darkened. Remove the spice bag and discard.
  • Pour or spoon into hot, sterilized jars, leaving 1/4-inch headspace, and seal. Process in boiling-water bath for 10 minutes.
