DIRECTIONS

  • Combine all cure ingredients. salt, curing salt and sugar.
  • Rub cure into beef on all sides. Cure for 7 days, turning daily.
  • Smoke at 190°F for 14 hours or to a 150°F internal temperature. .
  • Chill and slice paper thin.
  • Cut pears into wedges.
  • Alternate one slice of beef with one wedge of pear around the edge of a round tray. Decorate center with a vegetable centerpiece.
