DIRECTIONS
Combine vinegar, gin, olive oil, salt, sugar, and pepper. Add cubed chicken and marinate for 10 to 15 minutes. Peel avocados and cut into 16 wedges; season to taste with salt, pepper, and lemon juice.
Arrange 2 wedges on each plate; spoon marinated chicken beside them. Decorate with tomato slices, dollops of crème fraîche or sour cream, and cress.
