Blini with Caviar

DIRECTIONS
Bring milk and butter to just below boil. Cool. Sift together flour, sugar, and salt. In large bowl, beat egg yolks until foamy. Alternately stir in milk and flour mixtures. Mix yeast and warm water; stir into batter. Cover; let rise 1 hour. Beat egg whites until stiff, not dry. Fold in. Cover; let rise until it reaches previous volume. Preheat lightly greased griddle. For each blini, drop a scant 1/4 cup batter onto griddle. Lightly brown on both sides; keep warm. Each guest adds butter, caviar, and sour cream to taste.
