DIRECTIONS
Cook rice in salt water and shock with cold water. Drain well and sprinkle with oil.
Peel bananas and cut into slices. Cut red peppers in half, remove seeds, and cut into cubes. Toss bananas, peppers, shrimp, and cashews with rice. Mix curry powder with Thousand Island dressing and fold into the salad.
