DIRECTIONS

  • Grind pork coarsely and liver, jowl fat, and onions finely. Add salt and curing salt. Mix potato starch and white wine. Place meat in a mixer and mix well using a paddle. Add potato starch mixture and eggs and mix well. Fold in spices, truffle, and pistachio nuts. Stuff into beef middle and tie. Poach at 170°F to an internal temperature of 160°F.
  • Cold smoke for 3 to 4 hours.
