Potter's Cold-as-a-Potato Soup

Remove the outer layers and green tops of the leeks, and split. Wash the split leeks well and slice very thin. In a large skillet, sauté the leeks over medium heat in butter, stirring occasionally, until tender, about 5 minutes. In a suitable pot, combine leeks, chicken broth, and potatoes. Bring to a boil. Reduce heat and simmer, covered, for approximately 40 minutes, until tender, stirring occasionally. Strain and reserve broth. Put all vegetables in a blender container and puree until smooth. Add broth and blend until smooth. Put in a large bowl, cover with plastic wrap, and refrigerate for 24 hours. Before serving, stir in sour cream, salt, and pepper. Garnish with parsley sprigs or celery leaves.
