Annie's Good-Anytime Fried Potatoes

DIRECTIONS
Wash potatoes before slicing. If you prefer them without skins, peel before rinsing. Slice potatoes 1/4 inch thick. Dry thoroughly on paper towels.
Cover the bottom of a large skillet with vegetable oil and heat, over medium heat. Arrange potatoes and onion in skillet and add seasonings.
Lower heat and cook covered for 20 to 25 minutes, checking occasionally to see that potatoes are not burning. Flip as needed and cook until both sides are golden brown. (Add additional oil if needed.)
