DIRECTIONS

  • Halve the avocadoes lengthwise. Remove the pits and scoop out the inner flesh leaving some adhering to the skin so that there is a thick firm shell remaining.
  • Rub a little of the lemon juice on the inner surface of the shells to prevent discoloration.
  • Cut the scooped-out flesh into cubes, place in a bowl, and stir in the rest of the lemon juice.
  • Skin, deseed, and chop the tomatoes.
  • Chop the celery, red pepper, and onion and add these ingredients and the tomatoes to the avocado in the bowl.
  • Add the garlic, squeezed through a press, parsley, cream, and seasoning.
  • Combine the mixture well; it will thicken and make its own salad dressing.
  • Fill the shells and chill before serving.
