Pumpkin Cupcakes

DIRECTIONS

  • With an electric mixer, mix together in a bowl the pumpkin, eggs, oil, water, and sugar. Beat until well blended.
  • In another bowl sift together the dry ingredients and add to the wet ingredients, blending until smooth. Fold in raisins. Place cupcake papers in a cupcake pan. Fill the cupcakes 2/3 to 3/4 full.
  • Bake at 350° for 25 minutes or until a toothpick, inserted in the center, comes out clean. Allow to cool and frost if desired. These go perfect with Cream Cheese Icing.
