The meat can be barbecued in a smoker until well done, cooled, and shredded. A quicker, easier method is to score the meat on both sides to a 1/2-inch depth and rub with liquid smoke, salt, and pepper. Wrap with double foil and bake for 4 hours in a 325° oven, on a rack set in a baking pan.
Cool and shred. Mix sauce ingredients together with pork. This may be done ahead and the mixture warmed before serving, in a casserole in the oven. Set the casserole on the table and serve buffet-style with a basket of buns.
