DIRECTIONS

  • Sprout the legumes or soak them overnight in 3 cups water. Large quantities may be done and stored in the fridge for a few days or the freezer for longer periods.
  • Slowly stir water into arrowroot or substitute.
  • Combine lentils and starch mixture.
  • Blend mixture for 30 seconds in a liquidizer or food processor.
  • Let the batter stand for at least 1/2 hour to thicken so that it just holds its shape on the spoon. Add a little more water or starch if necessary to get the right consistency.
  • Heat the waffle iron for 2 minutes before spooning the mixture in.
  • Cook for 4 minutes.
  • Turn the waffle iron off and leave for 3 minutes before removing from the plates. If you have a non-electric waffle iron, simply cook on a low heat 4 minutes on each side.
  • Serve hot with any spread permitted in your diet.
