Artichoke-Cheese Scramble

Serves 4
DIRECTIONS
1. Drain the oil from the artichokes, reserving 2 Tbsp. Place the 2 Tbsp. oil in a large frying pan and add the onions and garlic. Cook until onions are soft.
2. In a large bowl, beat eggs with a fork. Add cracker crumbs and beat again.
3. Stir in remaining ingredients, including onions and garlic.
4. Pour mixture back into the large frying pan and scramble over low heat until done.
5. Serve with a bread of your choice and a fruit or juice.
