DIRECTIONS

  • 1. Drain the oil from the artichokes, reserving 2 Tbsp. Place the 2 Tbsp. oil in a large frying pan and add the onions and garlic. Cook until onions are soft.
  • 2. In a large bowl, beat eggs with a fork. Add cracker crumbs and beat again.
  • 3. Stir in remaining ingredients, including onions and garlic.
  • 4. Pour mixture back into the large frying pan and scramble over low heat until done.
  • 5. Serve with a bread of your choice and a fruit or juice.
