Apple and Zucchini Chicken

DIRECTIONS
Flatten chicken breasts with a mallet.
Heat margarine in a large frying pan on high heat. Add chicken, apple slices, zucchini, salt, pepper and tarragon. When both sides of the chicken are lightly browned, splash with cognac and flambé.
Remove chicken, apple slices and zucchini to a serving platter or individual plates.
Add flour to pan drippings and splash with more cognac. Cook and stir mixture for a minute, then flambé again. Add yogurt and heat for another minute, but don't let the mixture boil. Pour the sauce over the chicken and serve.
