DIRECTIONS

  • Sauté chicken in butter for two to three minutes; remove chicken from pot.
  • To the butter add the flour and stir over medium heat until lightly browned.
  • Add the onion, celery, green bell pepper and garlic and sauté until vegetables begin to turn transparent.
  • Add the stock, tomato sauce, thyme, basil, bay leaves, brown sugar, lemon slices, salt and cayenne pepper. Simmer for about 15 minutes
  • Add green onion, parsley and chicken the last five minutes of cooking.
  • Serve over rice.
