Yam-Sherry Casserole

DIRECTIONS

  • Preheat oven to 350 degrees F.
  • Butter bottom and sides of a 9" X 13" X 2" casserole dish.
  • Place sliced yams in casserole dish (1 layer thick).
  • Mix grated orange, sherry, and orange juice. Pour over sliced yams.
  • Mix sugar and salt. Sprinkle over yams.
  • Cut butter into small pieces and distribute evenly over yams.
  • Cover and bake for 45 to 50 minutes until almost all the juice (about 1/4 cup remaining) has cooked into the yams.
  • Remove from oven and serve.
