Yam Cookies

  • COOKIES
  • Preheat oven to 350 degrees F.
  • Place shortening and sugar in a 2-quart mixing bowl and cream until light and fluffy. Add egg and beat well. Add yams and beat well.
  • Combine cinnamon, ginger, salt, flour, and baking powder. Add to creamed mixture. Mix well. Stir in dates and nuts.
  • Drop by the teaspoonful about 2 inches apart onto a greased cookie sheet. Flour fingertips lightly and pat the top of each cookie to flatten slightly.
  • Bake for 15 minutes or until golden brown.
  • If desired, drizzle with Brown Sugar Glaze while warm.
  • BROWN SUGAR GLAZE
  • Combine brown sugar, flour, milk and butter in a heavy saucepan and bring to a boil.Cook 2 minutes. Remove from heat and stir until partly cool. Add confectioners sugar and vanilla extract. Beat until smooth. Drizzle over warm cookies.
