Yam Cookies

Preheat oven to 350 degrees F.
Place shortening and sugar in a 2-quart mixing bowl and cream until light and fluffy. Add egg and beat well. Add yams and beat well.
Combine cinnamon, ginger, salt, flour, and baking powder. Add to creamed mixture. Mix well. Stir in dates and nuts.
Drop by the teaspoonful about 2 inches apart onto a greased cookie sheet. Flour fingertips lightly and pat the top of each cookie to flatten slightly.
Bake for 15 minutes or until golden brown.
If desired, drizzle with Brown Sugar Glaze while warm.
BROWN SUGAR GLAZE
Combine brown sugar, flour, milk and butter in a heavy saucepan and bring to a boil.Cook 2 minutes. Remove from heat and stir until partly cool. Add confectioners sugar and vanilla extract. Beat until smooth. Drizzle over warm cookies.
