Cheese Enchiladas

DIRECTIONS
To make the filling, heat a medium skillet over medium heat. Add the onion and sauté, stirring occasionally, until lightly browned, about 4 to 5 minutes. Remove from heat and stir in the ricotta cheese.
Prepare the tortillas with method of choice and fill each one with the ricotta cheese and onion mixture and about 1/2 oz of each cheese.
Reheat in a microwave oven or bake according to directions. Serve two enchiladas per person.
Garnish with onions, feta cheese, thinly sliced radishes, and lettuce.
