Egg Bake with Green Chiles

  • * This recipe needs to be prepared 12 hours before serving.
  • Butter both sides of the bread and then butter a 9 x 13 casserole dish. Place half of the bread in the dish in a single layer. Place the chiles so they lay flat over the bread in a single layer. Cover the chiles with the grated cheese and top with the remaining bread in a single layer.
  • Beat together the eggs, milk, salt and pepper in a bowl. Pour over the bread to cover evenly. (If the bread is very dry an additional egg along with an additional 1/4 cup milk may be needed.) The bread should be thoroughly soaked but not soupy. Cover the casserole and refrigerate overnight.
  • Bake the casserole uncovered in a preheated 375° oven for 40 - 45 minutes until the top is puffed and browned. Cut in squares to serve. This is good either hot or at room temperature.
