Sicilian Cheese Casserole

DIRECTIONS
Preheat oven to 375°F.
Cook tiny shell pasta until not quite done (it will finish during baking) and drain.
Sprinkle salt on eggplant cubes and allow to "sweat" 10 - 15 minutes. (Sweating the eggplant lessens the amount of oil required to sauté it.)
Sauté eggplant and onions in oil over medium heat until tender. Combine with pasta, tomato sauce, parsley, lemon juice, capers, Parmesan cheese, and seasonings. Transfer to a 2-quart baking dish. Top with sliced Monterey Jack cheese and bake uncovered for 30 minutes.
