Sicilian Cheese Casserole

  • Preheat oven to 375°F.
  • Cook tiny shell pasta until not quite done (it will finish during baking) and drain.
  • Sprinkle salt on eggplant cubes and allow to "sweat" 10 - 15 minutes. (Sweating the eggplant lessens the amount of oil required to sauté it.)
  • Sauté eggplant and onions in oil over medium heat until tender. Combine with pasta, tomato sauce, parsley, lemon juice, capers, Parmesan cheese, and seasonings. Transfer to a 2-quart baking dish. Top with sliced Monterey Jack cheese and bake uncovered for 30 minutes.
