DIRECTIONS
Preheat oven to 350°F.
Combine all vegetables in a casserole dish; mix gently and set aside.
Heat the broth over medium-high heat and add oil, minced garlic, salt, bay leaf, remaining herbs (crushed fine), and sesame seeds; bring to a boil. Pour over vegetables and cover tightly (use a layer of foil before putting on cover).
Bake for 60 - 75 minutes, gently mixing twice during cooking.
Uncover and sprinkle generously with Parmesan and cover with thinly sliced Monterey Jack cheese.
Place under broiler until cheese is bubbly and golden.
