Grill-Barbecued Chicken Cheeseburgers

DIRECTIONS
Trim the chicken breasts and thighs, removing all fat and any remaining cartilage. Cut them into 1-inch chunks, and add to a food processor. Using short bursts of power and stopping once or twice to scrape down the sides of the work bowl, chop together the light and dark meat until the texture is that of ground beef, do not over-process. Shape the ground meat into 12 thick patties. Place the patties on a plate, cover, and refrigerate until grilling time.
Light a charcoal fire and let it burn until the coals are evenly white or preheat a gas grill (medium). Wrap the wood chips partially in foil, creating a small packet that is open at the top. Set the packet on the hot coals or hot lava stones; position the grill rack about 6 inches above the heat source and cover the grill.
When the wood chips are smoking heavily, rub the grill rack with vegetable oil. Place the chicken patties on the rack and cook, covered, turning often and brushing generously with half the barbecue sauce, until lightly browned and almost done through, about 6 minutes. Season each patty with salt and pepper to taste, then top each with a slice of cheese. Cover the grill until the cheese is melted, about 1 minute.
Place the burgers on the buns and serve, accompanied by the rest of the barbecue sauce.
