Lighter-Than-Average Crab Cakes

DIRECTIONS
Combine the mayonnaise, egg, and salad dressing mix in a large bowl; mix well. Fold in the crabmeat, 1/2 cup of the crushed cereal, the onion, and pimientos.
Using a 1/4-cup measure, form the crab mixture into 2-1/2-inch-wide, 3/4-inch-thick patties. Coat with the remaining 2-1/2 cups cereal. Transfer to a greased baking sheet. Cover and refrigerate for at least 2 hours.
Preheat the oven to 400°F.
Drizzle the crab cakes with the melted butter; bake for 15 to 20 minutes, or until browned and crisp. Serve with sour cream or tartar sauce, if desired.
