Turkey Wings and Gravy

  • Cut each turkey wing into three pieces (at the joints), and discard the tips. Remove as much skin as possible.
  • Place wing pieces, celery, onion, garlic, and bell pepper in a large pot with enough cold water to cover the wings. Add poultry seasoning and Cajun Spice Mix. Bring to a boil, reduce heat, and simmer until wings are tender, about 20 minutes.
  • Stir in brown gravy, and cook for 1 hour over low heat, adding water if necessary to prevent scorching. If gravy becomes too thick, add more water to thin. Adjust seasoning and serve over rice.
