Turkey Wings and Gravy

DIRECTIONS
Cut each turkey wing into three pieces (at the joints), and discard the tips. Remove as much skin as possible.
Place wing pieces, celery, onion, garlic, and bell pepper in a large pot with enough cold water to cover the wings. Add poultry seasoning and Cajun Spice Mix. Bring to a boil, reduce heat, and simmer until wings are tender, about 20 minutes.
Stir in brown gravy, and cook for 1 hour over low heat, adding water if necessary to prevent scorching. If gravy becomes too thick, add more water to thin. Adjust seasoning and serve over rice.
