Beef Borscht

  • Bring the broth to a boil in a large pot. Add the shredded beets, cover, and simmer for 15 minutes. Add the rest of the vegetables and cook until they are quite soft. Add the lemon juice, starting with 1/4 cup, then add 2 tablespoons of sugar. Add more lemon juice or sugar until there is a nice sweet-sour balance. Finally add the diced beef and heat through. Serve in large bowls or soup plates along with black bread and sweet butter.
  • Variation: For cold Borscht, omit the diced beef. When the vegetables are done, drain off the broth into a bowl. Puree the vegetables and combine again with the broth. Allow to cool, then refrigerate until thoroughly chilled. Serve in bowls with a spoonful of sour cream.
