Welsh Cheese and Herb Scones

DIRECTIONS
Preheat the oven to gas mark 7, 425F, 220C. Grease a baking tray. Mix together the flour and salt and rub in the margarine. Add the herbs and 6oz (175g) of the cheese. Add the milk and water and mix to a soft dough. On a floured board, roll out to a thickness of 1 in (2 1/2cm) and cut into rounds using a 2-1/2-in (6cm) cutter. Place on the prepared tray, top each scone with a little of the remaining grated cheese and bake for 10 minutes until golden. Remove from the oven and lift on to a wire rack to cool slightly. Serve warm or cold with butter.
