Quick Jam Biscuits

Preheat oven to 450°F. Stir the baking mix with the buttermilk and skim milk in a medium-size bowl or 4-cup measure until a soft dough forms. If the dough is too sticky, gradually stir in enough of the baking mix (up to 2 tablespoons) to make the dough easy to handle. Turn the dough onto a surface dusted generously with flour or baking mix.

Your child age four or older can help you knead the dough about 10 times and then roll the dough to 1/4-inch thick. (If you have younger children, you can give them small pieces of the dough and they can copy you by kneading and rolling their dough, using small rolling pins, while you work on the larger portion of the biscuit dough.) Your child can help you cut the dough with a 3-inch or 2-1/2-inch cutter.
Your child now can cut out the center of half of the cut biscuits using the plastic top of a 2-liter soda bottle or the top of a bottle of oil. Spread out the uncut biscuits on a cookie sheet. Then top them with the biscuits with the centers cut out. Your child can fill the holes with the jam or jelly of his or her choice (about 1 teaspoon per biscuit) using a teaspoon measure or small spoon. Bake for about 9 minutes or until golden brown.
