Cheesy Potato Skins

  • Cook the potatoes in a microwave or oven until tender (pierce a couple of times with a fork to allow the steam to vent). Cut each potato in half lengthwise and open to allow the potato halves to cool. Pour the oil into a small, shallow cup (a teacup or custard cup) and set a child's paintbrush next to it. Chop the optional green onions, and prepare the bacon if you haven't already done so.
  • CALL THE KIDS
  • Once the potato halves have cooled, show your child how to scoop out the middle of each potato half using a small spoon (leaving about 1/3 inch of potato attached to the skin). The extra potato can be put into a small bowl for a future serving of mashed potatoes.
  • Your child now can brush each potato half with the oil--brush the skin side first, set it down on the baking sheet, and brush the potato side last. Continue until all the potato halves are oiled and on the baking sheet. Mom, you now can broil the potato halves, watching carefully, until they are lightly browned on top. While you are doing that, your child, age four or older, can grate the cheddar cheese (being careful to hold the chunk of cheese at the end to avoid grating his or her fingers). To save time, you can buy the shredded, reduced-fat sharp cheddar cheese.
  • You and your child can sprinkle the cheese over the potato halves along with the green onions and bacon bits for the family members who want it. Mom, continue the broiling, watching carefully, until the cheese melts and bubbles slightly. Allow to cool and serve with dinner as a fun side dish. People often like to dip these potato skins in low-fat dips or salad dressings.
