  • Line a small cookie sheet or large plate with wax paper; set aside. Melt the chocolate chips in 1-cup glass measure in the microwave on the DEFROST setting, stirring every minute, until melted. Stir in the espresso powder. Once the chocolate is warm to the touch (not hot).
  • Dip the plastic spoons into the melted chocolate mixture to coat just the scoop portion of the spoon (so the neck portion of the spoon is not coated). Place on the wax paper. Refrigerate your chocolate-coated spoons until the chocolate has hardened, about 30 minutes.
  • Melt the white-chocolate chips in a glass custard cup or similar cup in the microwave on the DEFROST setting, stirring every minute, until melted. Once the chocolate is warm to the touch (not hot), dip the very tip of each of the spoons into the white chocolate (about a third of the way up the scoop portion of the spoon). Place spoons back on the wax paper and refrigerate until the white chocolate has hardened, 15 minutes. Wrap each of the spoons in a lollipop bag and tie the top with gift ribbon. Keep in a cool place until needed.
