Pita Wedges with Red Lentil Hummus

DIRECTIONS
Combine in large pot or steam kettle. Heat to a boil. Reduce heat to a simmer. Simmer just until lentils are tender, about 15 minutes. Drain off all cooking liquid. Transfer lentils to a large bowl.
Add to lentils. Puree mixture in food processor with metal blade. Mix well. Cover. Chill well.
Arrange wedges on service trays. Portion hummus mixture onto each wedge. Garnish as desired.
