Baked Chicken Sandwich

DIRECTIONS

  • To assemble sandwich: Spray a 9-by-13-inch baking dish with nonstick cooking spray. Trim sides of 6 to 8 slices of bread so they lie flat and cover the bottom of the dish.
  • In a nonstick skillet, sauté onions and mushrooms, stirring frequently.
  • In a large mixing bowl, combine onions and mushrooms, including liquid, with chicken, olives, and mayonnaise. Carefully fold in hard-cooked egg whites so they won't break up.
  • Spread all of this mixture over the layer of bread. Place remaining 6 to 8 slices of trimmed bread on top of the chicken mixture.
  • In a small bowl, combine cream of chicken soup, sour cream, and sherry, if using. Spread over bread. Cover and refrigerate overnight.
  • One hour and 45 minutes before serving time, remove dish from refrigerator and let stand 1 hour. Preheat oven to 325°.
  • Remove cover and spread grated cheese evenly over the top. Sprinkle with paprika. Bake 40 minutes, uncovered. Check to be sure center is heated through. Remove from oven and sprinkle with chopped parsley. Let stand 5 minutes; cut into squares. Serve warm.
