Almond Blueberry Granola

DIRECTIONS
In a large mixing bowl, add in the order given all the ingredients except the apple juice, syrup, oil and dried fruit. Toss until completely mixed.
Blend together the apple juice concentrate, syrup, and oil in a measuring cup. Pour it over the dry ingredients and toss until the granola is thoroughly coated.
Preheat the oven to 350 degrees F and lightly coat a baking sheet with a film of vegetable spray. Spread the granola in a thin layer on the sheet and place it in the oven for 20 to 25 minutes. Do not crowd the mixture or it will not toast properly. (Toast it in 2 or more batches if you have only a small baking sheet.) Stir it from time to time so it will toast evenly without scorching.
When the granola mixture is toasty and golden, remove it from the oven and stir it once more. Allow it to cool for a few minutes. Place 3/4 cup on a pie pan, and return to the oven to bake for another 8 minutes. It should be dark and crunchy, but not scorched. (You can omit this step, but this extra toasting gives the granola a richer flavor.) Stir this into the granola, cool and add the dried fruit, blending everything thoroughly. Place the granola in plastic bags or containers and store it in a dark, cool place or freeze until needed.
