Wild Rice with Pecans

Serves 4
DIRECTIONS
1. Soak the wild rice in a bowl of cold water for 1/2 hour then drain it thoroughly.
2. Place the rice in a saucepan with the chicken stock and bring it to a boil. Allow the rice to boil for 5 minutes, then reduce the heat, cover and simmer over low heat for 50 minutes. Remove it from the heat and without uncovering, allow the rice to sit undisturbed for 10 minutes.
3. While the rice is cooking, heat the oil in a small skillet over medium heat and add the onion and celery. Stir the mixture until the onion begins to soften and partially cover the skillet. Continue cooking over low heat until the onion and celery have wilted. Add the pecans and season lightly with salt and pepper. Set aside until the rice has finished cooking.
4. Fluff the rice with a fork. If any liquid remains in the bottom of the saucepan, heat the rice over high heat and toss it continuously until it evaporates. Stir in the onion mixture and season to your taste with salt and pepper. Serve hot or chilled.
