Beef Borscht

DIRECTIONS
Heat 1 tbsp. butter in a large pot over high heat. Add beef and brown for about 1 minute. Transfer beef to a bowl and set aside. Reduce heat to medium, add 1 tbsp. butter and the onions and cook, stirring often, until onions start to soften, about 10 minutes.
Add remaining 1 tbsp. butter and the cabbage and cook, stirring occasionally, until cabbage begins to wilt, about 10 minutes. Add stock and bring to a simmer over medium-high heat. Lower heat to medium-low, return beef to pot, and add tomatoes with juice and dill. Cover and simmer for 1-1/2 hours.
Add potatoes and continue cooking until tender, about 30 minutes. Season to taste with salt and pepper and serve.
