Apricot-Pecan Mold

Serves 4
DIRECTIONS
In a mixing bowl dissolve gelatin in boiling water. Stir in apricot nectar and lemon juice. Chill till partially set (the consistency of unbeaten egg whites).
Beat with a rotary beater till fluffy and light in color (1 to 2 minutes). Beat in yogurt. If necessary, chill till the mixture mounds when spooned. Fold in apricots and pecans. Carefully spoon gelatin mixture into a 5-1/2- or 6-cup mold. Chill till firm. .
Unmold onto a plate lined with leaf lettuce, if desired
