Softshell Crab Sandwiches

DIRECTIONS
Mix flour with a generous pinch of salt and pepper in a shallow bowl or plate.
Heat butter and vegetable oil in a medium skillet over medium-high heat. Dredge crabs in seasoned flour, shake off any excess, then pan-fry until brown and crisp, about 2 minutes on each side. Drain on paper towels.
Make tartar sauce by combining pickle, mayonnaise, lemon juice, onion, tarragon and hot sauce.
Spread tartar sauce on one side of each of the 4 pieces of bread, then make up the sandwiches, using 1 crab and a leaf or two of bibb lettuce per sandwich. Serve with additional tartar sauce.
