DIRECTIONS

  • Mix flour with a generous pinch of salt and pepper in a shallow bowl or plate.
  • Heat butter and vegetable oil in a medium skillet over medium-high heat. Dredge crabs in seasoned flour, shake off any excess, then pan-fry until brown and crisp, about 2 minutes on each side. Drain on paper towels.
  • Make tartar sauce by combining pickle, mayonnaise, lemon juice, onion, tarragon and hot sauce.
  • Spread tartar sauce on one side of each of the 4 pieces of bread, then make up the sandwiches, using 1 crab and a leaf or two of bibb lettuce per sandwich. Serve with additional tartar sauce.
