DIRECTIONS

  • Preheat the oven to 375°F. Grease twelve muffin cups.
  • In a large bowl, beat the margarine with 3/4 cup of the sugar, until well blended. Add the eggs one at a time, creaming thoroughly after each addition, until light and fluffy.
  • In another bowl, combine 2-2/3 cups of the flour with the remaining dry ingredients. Add to the egg mixture and then add the milk. Mix just until moist. Do not overmix.
  • Place the remaining 1/3 cup flour in a plastic bag. Add the berries to the bag and shake until the berries are lightly coated with flour. Add the berries to the batter. The batter will be very stiff if the berries are frozen. Drop the batter into the prepared muffin pans, filling them about two-thirds of the way. Sprinkle the remaining 1/4 cup of sugar over the muffins.
  • Bake at 375°F for 20 to 30 minutes, or until a toothpick inserted in the center comes out clean.
